Recently, IHOP, the global breakfast giant, known for its delectable pancakes, in a move to woo its vegetarian clients made an eggless omelette recently among huge media fanfare. While they have been making eggless pancakes and waffles since long, the attempt to make eggless omelette was for those who crave for fluffy, protein-rich omelettes but can’t have them as they are vegans or vegetarians in principle. A famous street vendor in Karol Bagh (K.B. Chaat) makes Moonglet, its his vegetarian version of omelette and people are always lined up outside his tiny shop for a plate of this protein-rich dish. To make this easy recipe, you need 2 tablespoon moong bean flour, 1 tablespoon gramflour, one onion finely chopped, 2 green chillies finely chopped, ¼ tsp ginger paste, ¼ cup finely chopped coriander leaves, water to make a batter that’s a little more runny than the cake batter, salt and black pepper to taste.
